Shrimp Kobabs Sunday

I got up around 5:15 this morning and went out for a 5 mile run.  It was really tough getting out of bed (as are all Monday mornings…. ) but once I was out there and running it wasn’t so bad.  I ran along the beaches and out to the point at Castle Island and back.  The weather was cool with low humidity which made the run a bajillion times better. 😀

Breakfast

Nothing fancy, just a bowl of Overnight Oats minus the Overnight part.  I prepped a bowl with apple cinnamon Chobani yogurt (awesome flavor btw), almond milk, chia seeds, and oats and threw it in the fridge while I showered.  I then topped it with a sliced banana and it was ready to go!  I’m still getting used to the mushy, cold texture of this breakfast but overall it was pretty good.  And really filling.   

Last Night

After a 2.5 hour car ride home from Maine and then plopping around all afternoon, I decided I needed a little exercise to get me going.  I went out for an easy 30 minute run and felt a million times better!  I did some errands and then sat down to a yummy dinner prepared by Mike.  He made…….    Shrimp kabobs!  With grilled corn on the cob as the side. 😀  I started with 2 kabobs and then went back for another. 

The kabobs were coated with extra virgin olive oil and Adobo seasoning (just realized it’s called Adobo; I’ve been calling it Adobe forever :() and put on skewers and grilled.

  1. I’m a total sucker for kabobs. They’re just so fun to eat! Hope you had a fantastic time in Maine! I went to school there and love love love it.
