Who really wants to cook a big meal after a long day of work, working-out, and commuting?! Not me. I love coming home from work and being able to throw together a healthy, delicious dinner in just 10 minutes. So that’s exactly what we did last night. While Mike grilled the marinated Mojito Lime shrimp, I quickly prepped a salad with mixed greens, chopped cauliflower, avocado’s, and craisins (basically whatever we had in the fridge).
So good! This meal had a perfect combination of protein, healthy fats, and nutrients. The avocado’s alone were loaded with health benefits as you can see from this article here. That’s why I love avocado’s…. 😀
