Bring On Christmas!

Hey guys!

So instead of hitting up the gym this afternoon, I decided to do something much more important and put up my Christmas decorations!  Yayyyy!  I pulled out all 6 decorations from storage and quickly realized a trip to Christmas Tree Shop and Home Goods was in order.

I wasn’t exactly sure what to buy but I knew I really wanted window lights, some garland, and a couple more living room decorations.  I figure I can chip away and buy a couple of decorations every year and eventually I’ll be all set.  So here’s some of what I have so far……

In my dream world we would have a Christmas tree in our living room but since Rocky’s such a spaz I don’t think it’s a good idea.  I just know he’ll to try climb the tree and I’ll come home to mess and broken ornaments every day.  Maybe he’ll be more chill next year?  So instead of a tree, I decorated the shelf on the wall, placed lights in the windows (which I’m obsessed with), and casually decorated our small space.

I also picked up this cute little hot cocoa mix from Home Goods.  Mike had mentioned that he wanted to make hot cocoa with Bailey’s or Kahlua so I had to get it for “him”.  I knoooow it’ll taste delicious after my long run on Sunday… 😀

Alright time to log off and catch up on Jersey Shore with Mike (don’t judge our exciting Friday night ;))

Anyone going for a long run this weekend?  Or racing?

-I’m hoping to run 9-10 miles on Sunday morning…  it’s going to perfect weather (50’s and sunny) so I might as well enjoy it while I can. 😀

Do you have a Christmas tree?  Real or fake?

-No tree this year but I’m all about the real trees!  I love, love, love the smell of a real tree.

Busy Day! And It’s PB Granola Time!

Hello, hello

Today has been a very busy, productive day!  I arrived home from Austria around 8 last night (2am European time) and felt like I had a lot of catching up to do.  So naturally I couldn’t sleep and was up and at it this morning!


I started my day with peach flavored greek yogurt and topped it with GoLean cereal and chopped pineapples slices (that’s basically all we had in the kitchen)  The combination of flavors was delicious!


Around noon I was starving for lunch so I re-heated leftovers from Mike’s dinner.  Annie’s mac & cheese, steamed broccoli, and sausage.  Another great meal today (I’m 2 for 2!)

Peanut Butter Granola

As much as I like GoLean cereal on my greek yogurt, it’s nothing compared to home-made granola.  So I decided to whip up a quick batch this afternoon and used my peanut butter granola recipe found here.  I also added sunflower seeds to the mix and baked it longer than the last time (about 35 minutes).  This recipe is super easy and most of the ingredients you probably already have in your cabinets at home.

This granola doesn’t come out as crunchy as some other granola recipes but it’s still tastes amazing!  Any suggestions on how to make it more crunchy or clumpy?  Another perk about pb granola is that it instantly makes your entire place smell like peanut butter! 😀


I tried to be a little festive and use a Christmas tin for storing the granola in the fridge.  Mike and I have about 4 Christmas decorations so I might as well use them, right?  Actually now that I think about it, this might be my mom’s tin that I “borrowed”….  Guess it’s time to stop at Christmas Tree Shop to stock up and really decorate my place this year.

A Post In Numbers

-5:50 was the time when my alarm went off this morning and I hit the snooze button 1 time.

-15°C in Innsbruck today with 35 mph wind gusts.

-1 beautiful view…. 😀-10 minutes to walk to the hospital (for work).

-28 days til Christmas and the streets are already very festive in Altstadt (Old Town), Innsbruck.

-3 meals were consumed by myself.  Oh, how I can’t wait to talk to people again….

-14 hours til I’m back at this train station enjoying the #1 iced coffee in the world!  I have to find something similar in Boston! 

-2 fried eggs, 1 sausage, 1 piece of baguette with jam, and some fruit salad was included with my breakfast. 

-115 pages left to read in “Gone Girl”.  Ahhh such a good book!  Have you read it yet?

-45 minutes power walking on the treadmill & 15 minutes lifting weights in a gym that was about 624 degrees!  Why do gyms blast the heat?!

-3.60 euros for my cobb salad.

-2 days till I’m back home and can make this delicious hot cocoa.  In the mix: 1 cup nonfat milk, 1/2 ounce semisweet chocolate, 1 pinch of salt, 3/4 teaspoon honey, and 1 dallop of whipped cream. 🙂
