California Lovin’

I flew to Orange County, CA on Sunday night for work and I might never come back.  The weather here has been a perfect 70’s and sunny and is supposed to be in the 80’s today.  This is winter weather!?  Why don’t we all live in California?? 🙂

Even though I have training everyday, I still make an effort to workout.  So on Monday and Tuesday I set my alarm for 5am and headed downstairs to the hotel gym for a 45 minute sweat session.  I was also able to squeeze in a quick 2 mile run along Newport Beach last night.  The run was a struggle for some reason (hence the fact I only did 2 miles) but the views were ah-may-zingggg!  Don’t you love working out in new places?

A sandwich to die for.

I did it!  I ran 10.5 miles after a full day of working yesterday!  I know I ran 11.5 on Tuesday but I also took a half day from work so that was so much easier.  There’s something about pushing yourself on a Friday evening when you’re already mentally & physically drained from the week.  But the weather was ideal for running upper 30s maybe 40 degrees (that’s ideal for me :)) and I just went out and did it. 

I ended up staying in Southie for my run and ran the Castle Island loop twice and back along the beach.  My running days in Southie are limited so I’m trying to really appreciate every moment out there….   the views of the ocean, the smell of salt air, the sounds of the birds, all while running towards a beautiful luminated city skyline.  Yup, I’m gonna miss this route.

I finished my run 6:30pm and stretched while Mike prepped my all time favorite sandwich! This thing is not paleo or healthy but it’s amazingggg and you have to try it!

He prepared the sandwich opened faced and included sliced baked ham, sliced capocollo, sliced prosciutto, roasted red peppers, artichoke hearts, tomatoes and pesto on one side of the bread and the fresh mozzarella and grated cheese on the other half.  Next bake it at 350 for about 20-30 minutes, close the sandwich and enjoy!  You can basically add anything to this sandwich and it’ll turn out tasting DELISH. 🙂 

Btw, I forgot to start this post off by telling you guys about our coffee yesterday morning.  Folger’s Caramel Drizzle + Dunkin’s Turbo + Silk’s original almond milk = so tasty! 

Does anyone else only like Silk’s almond milk and no other brand of almond milk or is that just me?? I even like the Whole Food’s brand, weirddd.

The rest of my weekend will be spent working a track meet, checking my potential future house with my mom (fingers crossed!), maybe dealing with a snow storm tonight and then flying to Cali for the week!  Bring on the WARM WEATHER! 🙂

Hill workout & my new favorite home-made dressing.

Today’s workout was supposed to be spent on G Street.  I had it all planned out: quickly come home from work, change, and slowly jog over to G Street to do hill repeats until I couldn’t move anymore.  But as soon as I left my office, I wimped out, couldn’t handle the 27 degree weather and brought my workout indoors to the treadmill. 

For the first time ever, my gym was actually cold and I was forced to start my workout wearing my cardigan from work…..   at least it matched, right?

I changed my speed and incline a couple times but here’s what my hill workout basically looked like:

  • 5 minutes: warm-up walk/jog at 1% incline
  • 3 minutes: jog (speed 6.0) at 4.5% incline
  • 2 minutes: run (speed 7.5) at 1% incline
  • 3 minutes: jog (speed 6.0) at 4.5 (or 5%) incline
  • 2 minutes: run (speed 7.5) at 1% incline
  • Repeat intervals for 4 miles and then cool down

Make sense?  3 minutes of jogging hills, 2 minute’s running a flat surface, and repeat.  This left me huffin’ & puffin’!


After working out, Mike and I came home and got to work on dinner.  Actually he got to work and I zoned out while obsessing over Pinterest and Houzz.  Ummm btw, have you guys heard of Houzz?!  I just found out about it last night and can tell I’ll be spending a lot of wasted hours on that site.  If you’re house hunting or decorating, you have to visit the site. 🙂

Sooo dinner turned out tasting awesome thanks to my new favorite home-made honey mustard salad dressing.  I combined a lil’ pure organic honey, honey mustard & extra virgin olive oil together for a delicious, healthy dressing.  Much, much better than EVOO w/ balsamic vinaigrette.

Tonight’s salad contained mixed greens, iceberg lettuce, grilled chicken strips, canned corn, white beans, broccoli, and feta cheese.  Perfection.

(Mix the honey, mustard, and extra virgin olive oil in a bowl before adding the salad)

Time to watch tv and relax for the night…..
